In yesterday's post I mentioned having bought soy-free eggs, and Shadowmoss commented she had never heard of them.  I found this info on the internet, and will repeat it here in case there are others who also wonder about it.

"Soy has become a big part of the human diet post World War II, with the result that there are many people with soy allergies today, and many people today are trying to reduce or eliminate soy protein from their diet.  Soy is the cheapest protein available today, and it is a major component of most animal feeds. Cheap soy protein allows chickens to grow the fastest, and produce the maximum amount of eggs during their peak laying cycles. If you believe you are allergic to eggs, it could be that you are in fact allergic to soy protein that researchers have now found soy to be present in egg yolks. Almost all commercial eggs, including those that are organic or marketed as "Omega 3" eggs, are from chickens fed high concentrations of soy. So if eggs are a part of your diet today, so is soy protein, whether you realize it or not."

I don't think I eat enough soy products to be bothered by it, and have never had any kind of reaction to eggs.  I find that organic eggs, soy or no soy, taste much better and fresher and remind me of eggs from my grandmother's hens many years ago.

My granddaughters Autumn and Arianna stayed at my house yesterday evening while their parents went to a movie, and it was fun being with them.  The TV was off most of the time, but we did watch a few episodes of Phineas & Ferb, which I'll have to say I enjoyed.  My grandsons in NY introduced me to this cartoon a couple of years ago.  I'm not much fun when it comes to television though, as I have no DVD and all other equipment that make up TV watching today (not even a flat screen).  I even have to scroll through the guide because I only remember the 5 or 7 channels that I watch.

It seems that one part of the country finally gets a break in the weather but another part flares up.   I hope all of you in the South Central states keep safe.

- Blueberry Muffins! + Update
One of the vendors at yesterday's market sells walnuts, and I saw that he had bags of walnut meal as well.  I thought of the recipe I found for muffins using almond flour, and figured I would try it with walnut flour.  I don't have honey,...

- Just A Normal Day
I drove out to get milk and a couple of other items I forgot yesterday, and decided to take some pictures of the creek - it runs behind the houses across the road, but I got the photo from the small bridge on the way out to the main road.  I wish...

- Just Hangin' In There
I guess I should post an update, and tell you that I have been pretty quiet because I still am in pain, and that has put me in a very pissy mood!  My post op is scheduled for this Friday, and yesterday was only the 2 week mark since surgery, so it's...

- Deja Vu
That's what I felt as we were speeding to the hospital emergency room last night - this time for my granddaughter Arianna, who had an allergic reaction.  Jeannie, the girls and I had been to the gym (the kids have their own playroom with attendants...

- Recipes From The Road: Romanian Stuffed Eggs
Though we are going to travel to Romania again this summer, we could not wait any longer, and today I've decided to do the Romanian stuffed eggs recipe I learned on our last visit there. Since then, I prepared it for many of our friends,...
