New Menu Debuts at Windows on Aruba

On the new dinner menu, Chef Boland has included updated versions of old favorites, like Oysters Rockefeller, Veal Oscar and Chateaubriand. He has also integrated delicious and unexpected flavors into his dishes, with entrees such as Tamarind and Miso Glazed Sea Bass and Filet Mignon with Portobello Cocoa Sauce.
The exciting updates aren’t limited to the dinner menu; Chef Boland has also introduced new dishes for the restaurant’s famous Sunday brunch menu. Windows’ brunch, which was voted as the “Best Sunday Brunch on Aruba,” now features delectable dishes like Eggs Benedict with Tobiko Caviar Hollandaise Sauce and Pancakes with Crème Anglaise.
When developing the concept for his new menu, Chef Boland focused on sustainable dining principles and sought out fresh, local ingredients to expand the restaurant’s farm-to-table offering. As a result, he has developed partnerships with local farmers and fisherman to create the freshest dishes while also supporting the Aruban economy.
A veteran with over 25 years of diverse culinary experience, Chef Boland is renowned for his talent in crafting distinctive and successful menu concepts, specializing in creating flavorful dishes with fresh and wholesome ingredients. He is an expert on a variety of styles and cuisines, including, contemporary Caribbean, South American, Thai, Indonesian, Asian fusion and American. He also spent many years training in France, where he received concentrated instruction in classic French cuisine. His recipes feature a creative fusion of flavors and the freshest ingredients, which he sources locally whenever possible.
Chef Boland’s culinary leadership is not limited to his position as Head Chef at Windows on Aruba. He also serves as Regional Executive Chef for Divi Resorts, a position that tasks him with creating new menus, conceptualizing future restaurant ideas and unifying standards of culinary excellence for the company’s restaurants. He is also focused on aligning all Divi Resorts restaurants with the company-wide Divi Cares initiative, which aims to promote sustainable dining by offering farm-to-table and dock-to-dish entrees. Under this program, all Divi Resorts chefs work directly with island fisherman and farmers to bring in the freshest local ingredients for guests to enjoy.
