Foodies: Taste the Delicacies of Nice


With a population of about one million people, the city of Nice is France's fifth most populous city. Located on the French Riviera on the Mediterranean Sea, the city is known for its beauty and culture. While travelers from around the world visit the city to stroll along its seafront or see its historical and cultural attractions, many simply enjoy soaking up the city's atmosphere while dining in one of its bistros or cafes where the tastes of Nice demonstrate why its cuisine is so revered.

The Culinary Charms of Nice


In many ways, Nice's cuisine is so extraordinary because its position near the Italian border. While many of its dishes are comparable to those of Provence, Nice cuisine contains many Italian accents. Socca


Essentially a crepe made from chickpea flower and olive oil, this rustic dish has no pretensions; it's merely simple and served warm and sprinkled with pepper. In some ways, it reflects the region's more historic past before tourists and posh hotels, when fishing villages dotted the coast and people relied upon simple snacks as they went about their busy days. Socca is believed to be a Genoese influence, but the people of Nice adopted it so long ago that it has become a city staple.

This type of white pizza may have come been a Roman influence on Nice and surrounding cities on both the French and Italian border. It's been enjoyed, therefore, for centuries and many recipes for this signature dish are quite old. Cheese is seldom used to cover the thickened dough and the top is generally covered with nearly-pureed anchovies, garlic, olives, and onions. It's a typical Nice appetizer and the perfect meal to enjoy at a sunny café.

Ratatouille


Few visit the south of France without sampling this rustic dish. Ratatouille originated in Nice before spreading to the rest of Provence. It is a vegetable stew that features tomatoes, garlic, onions, peppers, eggplant, zucchini, and various herbs of Provence. Often eaten as a side dish, it is also enjoyed in crepes or added to omelets.

While these are among the city's most noteworthy dishes, travelers also hope to try cuisine favorites such as soupe au pistou, pan-bagnat, and daube.
